Frying bacon in a deepfryer is actually one of the healthiest ways of preparing bacon!
Reason is, is that the bacon in the flyer almost instantly rejects its fat and closes off, so way less fat can get stuck on the bacon strip. Compared to the pan-method, the bacon cooks way slower and doesn't do this process fast enough, so it can retain a lot of its original fat content.

The batter you are using is bland and can be done much better. Eggs, wheat flour, milk, water, salt, pepper and beer gives a much better batter, both in terms of texture and flavour.
This is essentially a modified pancake batter I listed, but suited for deepfrying. Milk stays in the batter in a higher degree than water or beer, and the fatter the milk you use, the better. Water is for pure crispin' action, and since beer is both flavoured and carbonated, you will get a tastier (flavoured) and lighter (carbonated) batter that crisps better too.

Now, my suggested serving method is in a foot long sandwich with lettuce, cucumber, a touch of chipotle-spiced mayo and spices.

Pro tip: if you plan on making a LOT of batches, substitute the water for 1/2 vodka and 1/2 seltzer water - this keeps the batter nice and light since water forms gluten making it all tough.

That being said, I plan on making a crap ton of this with a nice tangy sour cream based dipping sauce for the next Risk gathering....

Dude why dip it in batter? I do this all the time at my house with my own deep-fryer just cu ta pack of bacon i half heat the grease and drop them in for about 30 secs and pull them out.... Trust me THAT is sex in your mouth my friend.
