Just quit after fighting the gaping dragon. I summoned Solaire and Lutrec and, in their combined efforts, they hit the dragon once before both dying, and I was hardly doing damage so I let myself die. Should I be going about this differently or was I unlucky that run?

You were just unlucky. Usually, Solaire's Lightning Spears will kick the dragon's ass. And Lautrec just does his own thing.

I just summoned help for Ornstein and Smough and I finally kill them.
But the guy I summoned was really powerful and a prick. He killed Ornstein first. I wanted that armour damnit!

Dark Souls is a game that provides a challenge. In the tutorial it teaches you the controls then just throws you out into the game. There is no more help other then the advice from NPC's or the tips from other players (the tips could be false and cause you to die most of the time). It is open worldy but in a linear fashion. The funnest part in my opinion is making a character build that you enjoy. Boss fights are hard at first, but once you've seen their attacks they become easier. Multiplayer is designed so that you don't get an easy walk through of the game. You can summon 1 - 2 players to help you in an area of the game. Your world can also be invaded by other players were they will try to kill you. The game is not forgiving and not for the short tempered. Over all it's an amazing game in my opinion. I would suggest borrowing it from a friend or renting it first.

Some guy invaded me using just fists and no armor, so I took off my weapons and we started punching each other, later he put on a dark hand to try and grab me so I got one out too

Later I saw a red soapstone sign, so I summoned another red phantom, he took his weapons off and started punching us, so I gave him a dark hand. We spent about 30 minutes trying to grab each other for humanity.
Around 40 minutes in the guy I'm locked on to got bored, switched to the katana and catalyst in his other slots and killed us both while we were unarmed

Took me forever because I got the DLC on NG++, but I refused to summon anyone to help because I wanted it to be a one-on-one swordfight. I ended up beating him and it made me extremely happy, and then Manus kicked my ass.

I'm slightly OP for my point in the game, I made a sorcerer, got the black knight sword off the black knight in undead burg, grinded so he can one hand it, put in points in intelligence to keep it top stat, have heal miracle, and when I dropped on the tauraus demon with a drop attack, it one hitted him. Black knight sword combined with soul arrow makes the begging at least quite easy. I melee killed the second black knight as soon as you get in undead parish
