to be honest its much better to practice parrying in a "real" fight (by real i mean like with actual invaders etc) its just much harder to pull of if you know that they gonna kick your ass if you miss it.
but still, if anything else fails you can just practice on mobs. seriously, those undead soldiers in the forest of giants are harder to parry than 90% of the playerbase. but yeah, good luck buddy , it took me a while to get use to ds2 parry after ds1

Actually if you're on dsk1 use white soap to summon ally, you can parry their attacks with no damage. Hit boxes and all will be the same. Of course in online, timing will be different

I'd use a fast parry shield and if you think you're good enough, use Parry dags. (I've mastered the parry dags for a ninja play through (Only stealth, daggers / katanas, and ninja-light clothes (I.e. thieves cloths))
