It's my favorite series too. I honestly can't think of a show that made me cry and laugh more. Maybe Pokemon, but only the first season. Maybe the second.

I recently thought very much the same thing when I was re watching the series.
But, the fortune teller could have been a fraud. Just telling her what she wanted to hear. "You'll live long and have a big family with a powerful husband."

and she did tell Aang, in the same episode, the same way he changed the clouds to read something new, he also had the power to change his destiny.
using that logic, the future is form-able and mold-able and always changeable.

That just translates to. "Hey, I'm just giving these my best guesses. But if I'm wrong, the future is a fickle and ever changing thing you know. But when I'm right, you better believe I can see the future."
