Yes, I did miss 1 big symptom, hallucinations. Mercury poisoning can cause these.

There are indeed other furrofluids (metal liquids) than Mercury. This is why I first thought it wasn't Mercury, because that would be too easy. But the symptoms match Mercury to a near perfect T.

There seems to be a debate on whether the Red Lotus was a waterbender or a metalbender. The only evidence I gave was the bender's forms, resembling Tai Chi, i.e. waterbending. An even bigger debate seems to be whether mercury and be metalbended, as it has no impurities to bend. Perhaps Su Yin is just an extremely powerful metalbender. We've seen crazier things, like psychic bloodbending. Or maybe the poison is just a fictional substance that's similar to Mercury. Or maybe the writers just made a mistake, not remembering the physics of metalbending.

With this new evidence, I'll add to my final verdict: The poison was Mercury or a similar, fictitious substance that has impurities giving it the ability to be metalbended.

Could mean that it's not meant to be mercury at all, just something that looks like it. Perhaps the animators made it look like mercury because audiences would associate it with poison.
I don't expect that they'll elaborate on the nature of the poison itself.

that is slurry. It's what potters use as a glue/paste to mend clay.

It is literally a 50:50 mix of clay and water.

It could be a substance of a mix of water and mercury, using an emulsifier to keep them together. If it is mercury at all, or if we're getting technical into it about a cartoon that might just have made it a completely fictional poison.

On that note, metalbenders can't bend purely elemental metals (e.g. Platinum), last time I checked they do it by bending the earthen impurities within the metal, so neither type of bender should be able to bend Mercury.
That being said, the poison looks pretty damn similar to mercury, so maybe the writers were just overstretching a plot device or something.

Just kidding, but in all seriousness she wasn't bending the "earth" she was looking for the weak points in the metal, all metals have them, jewelers know where they are, thats why when you buy a diamond the price can vary completely even if they're the same size, because some are more refined and some arent, meaning, some were under pressure longer and some weren't, thats why she wasn't doing any hand signs, she was just hitting it to expand the weak points(theres a scientific term i can't think of its not impurities) so with mercury removal, she was simply controlling these points pulling it out of korra.

everything in the body is connected. nutrients from food make their way into the blood stream. it's a stretch, but it's possible for the poison to be moved from the bloodstream to the digestive track.

plus Korra had just taken one hell of a beating, she could've had some internal bleeding into her stomach or throat.

Earth benders can not bend iron, same with metal bending. Metal benders bend the small pieces of earth inside the metal, not the metal/iron itself.

actually, I think that's just a training method. toph got out of the box by focusing on the unrefined portions of the plate, but she's later seen bending armour out of first class fire nation steel

No, that's how all metalbendeing works. In LoK it's shown that metalbenders (including toph) can not bend platinum because it's too pure of a metal, not enough unrefined earth to bend.

as for the iron part, remember in Book 1 Water when Katara bended water out of Aang's lungs? She did that with relative ease and no formal waterbending training. yet, it takes a master under a full moon to bend all the naturally occuring liquids in the human body.

perhaps, just like bloodbenders, metalbenders can only bend the natural occurring metals in our body like iron with a "bending boost" while alien objects, like poison or water in the lungs, can be bended no problem.

Whatever the poison was, it had hallucinogenic properties. It also seemed to impair Korra's coordination and rational thinking, as she was pretty much out of control during her fight with Zaheer, despite already mastering the avatar state. Honestly, the physical damage from the poison only seemed to take effect near the end of the fight. I'd also like to point out that she moved her arms a bit in the final scene, so at least she's not paralyzed. She's either significantly weakened or has severely impaired motor skills. My guess is the former. How long it's going to affect her has less to do with any actual science and more to do with how much they build the plot around it.

I think it was just a metalbender using waterbending forms because it's in a liquid state. I imagine that sand benders use a style more similar to waterbending than typical earthbending because sand moves more like a liquid than a solid. What I'm saying is I doubt a waterbender could also manipulate mercury, the only think we've seen waterbenders and earthbenders both use is mud, for obvious reasons they can both manipulate it.
