Actually, that is Appa's mother, from the episode "Appa's Lost Days". Upon his arrival at the Eastern Air Temple, he had a flash back to when him and Aang met.

I am not certain, but this should be found in Book two, after the episode "The Tales of Ba Sing Sei" and before the episode "Lake Laogai". But seeing as this all is from memory, I'm not sure/
