..... actually refers to the fact that those institutes aren't dealing with religious matters.... Think food banks and whatnot. As in for the world.
Or, you know, you could just assume like most people that the Catholic Church does nothing good for the world and whatnot, regardless of the fact that it's probably one of the largest and best organized group of charities in the world.

actually secular originally meant pertaining to a sect sect-ular, the catholic church just has a tendency to use archaic terms

It actually stems from saecularis, meaning of an age or of a generation, pertaining to things not involved with any religion such as eating, washing, hunting, etc. While certain religious rights do involve these traits, they are considered endemic to human nature and therefore are secular when taken for what they are.

hate to burst your bubble but it means what it is meant to mean. 2 Christian Church (of clergy) not subject to or bound by religious rule; not belonging to or living in a monastic or other order. So in other words they are the priest that can be moved around from church to church. the dont belong to any specific diocese. in short the denoting part means that they are not tied down by being in a monastery or something like that.
