Picollo had a huge incredible power level then he fused with Kami who had probably 0.5% the power piccollo did and his power level pretty much doubled. Meh!

That really doesn't make any sense. He's half a being who's power exceeds well over 100000 times that of his other half but when they fuse he doubles his strength? I know that is how it is suppose to make sense but it really doesn't, that's just giving a 2 second explanation to a huge plothole.

think of it like this, kami is another piccolo basically, hes old and weak, but the very essence of him will add a LOT to piccolo cause it will make everything in him whole, and add a couple of hundred if not thousands of years of experience to him

I just don't see the point in watching DBZ when pretty much every shounen anime nowadays has improved upon it.

Watch DBZ Kai. It's shorter than other Shounen and doesn't try to act like it's any deeper than it actually is. Not to mention that these 'improvements' you're talking about only really apply to One Piece, which also suffers far more from awful filler arcs than DBZ ever did.   
Not to mention that with DBZ(and even moreso with Kai), you don't have to wade through a ton of sagas where the exact same thing happened as in the last as with Bleach or have to deal with fights being cockwaving contests like in Naru   
True, DBZ has flaws. Absolutely no way that can be denied. But of Bleach, Naruto, One Piece, Reborn!, Fairy Tail, Toriko and DBZ, I would say that DBZ has factors that make it superior than almost all of the others apart from One Piece.   
   
Secondly, if that's not enough for you, then take this: Hokuto no Ken is another rather decent(if old) shounen that's visuals haven't aged well at all. And yet, I watched it because it is a piece of the history that made anime what it is today. Saying you won't study an older piece of work in a genre or art form simply because it's old is not just ignorant, it's stupid. Sure, it may not have aged well, but it puts perspective on things. Shows you how the industry has evolved and reached the point it has today.   
   
Finally, DBZ doesn't suffer from the fan-service for the sake of fan-service that all anime seem to suffer from these days. Take that as you will.

Most would argue that Yuyu Hakasho was a big part of the poularization of the figher-anime genre as well. Personally, I enjoy both shows

I love both as well, don't get me wrong, Yu Yu Hakushou is my second favorite fighter and my 8th favorite anime ever, DBZ is 6th.

Firstly, anime came from manga, shonen manga already existed.
Secondly, DBZ was not the first shonen anime, hell, it even beat itself to that with Dragon Ball. (Which was also not the first shonen anime.)
