When I see attacks like this, it makes me wonder how the Earth isn't all screwed up yet with all of the destruction they cause. How do they keep finding untouched mountainous deserts to fight in?

I have a theory that their power became more contained as they continued to refine their techniques. Like the fact that they kept getting stronger and yet the scenery became less affected by their attacks around them. Their power was still immensely stronger than it used to be, but they had such control that the damage occured over a smaller area. That or Toriyama didn't bother remembering such little details in the show.

Funny you say "Earth Vanished" Buu destroyed the Earth, so they brought it back, presumably restoring all the damage they made throughout the years.

fun fact: only upto a full year can be fixed.
For example, if a person dies more than a year beforehand, they cannot be revived with the dragon balls.

Well that was purposely meant to destroy the planet, but I understand what you mean. I was talking about attacks directed towards people on the ground. Seeing as how if Vegeta aimed just a bit lower with his final flash against Cell, it's implied that Earth would be destroyed. Bby the end of the show they are probably triple the strength of that so their attacks would easily have the power to make Earth go boom.

Apparently, the reason the Earth and Cell didn't vaporize after Vegeta's Final Flash (according to Piccolo) was because Vegeta curved the beam upwards, saving the Earth.I bet they pull that trick (pun intended) all the time.
