people always say "communism seems great on paper" but I never really saw the logic in that. I'd rather live with freedom and have to make my own decisions than have the government give me anything while I'm just their "worker."

Which means you didn't read what communism IS on paper, but did form an opinion.
In its theory communism has nothing to do with government, its a market theory of ownership.
Theory is that if there is enough produced so everyone can live well, then everyone should live well. And that you should be, for your work, given everything you need.
Basically imagine that everything in the world, every company every property everything, is given to one company, and then everyone int he world is made full partner in that company. Everyone works so that company would prosper and in return company gives them everything they need to live well.
Marx also wrote that workers should have huge freedom in their life, leisure time and self determination.
That's the THEORY of communism on paper. Sounds nice, doesn't work, at all, but does sound nice.
Communism as a government is something completely different, developed by Lenin and his ilk, and has very little to do with communism on paper (for one they made russia communist, when communism idea clearly says that only highly developed capitalist society that produces more then it needs can be turned to communism)
