You dont really think that the Elder scrolls universe will be set to the easiest difficulty do you?
Learning spells and such, you would need to join a guild for that and that costs money or you have to do missions where you could get shot by a bandit and bleed to death.
There is no health regeneration if you actually lived in skyrim.

Have not played either game, but I would definitely choose Skyrim. Magic, mythical creatures to be slain, and the world wouldn't be an unusable irradiated **** pile for a millennium. Oh yeah, and the nordic space program apparently is doing pretty well.

no it is known that akavir exists and has snake, monkey, tiger, and snow demon peoples also atmora, aldmeris and pyandonea are cannon although I dunno about the whole geography part
While I'm pretty sure the existence of Aldmeris is a canon, it is unknown if it still exists and where it geographically is(something like South-West to Summerset Isles is the best version so far).
You are right, Aldmeris is like a Nirn version of Atlantis with some differences. Nobody knows where it is, if it still exists or if it ever existed. Some say that Aldmeris was sunk into the sea by the angry gods of the Aldmer. An alternate theory presented by the Moth Priests states that Aldmeris never existed as an actual homeland, but was a collection of pictures and ideas left over from the Mythic Age. But still even whitout the parts of the map that are a canon there are still a lot parts of the map that haven't been playable in any game so there is a lot of potencial.
Since there was an option to play literally any of well known races in last 3 TES games I've played I doubt all of these countries have a potential to be represented in next TES games.
Even in Skyrim itself you can find about only 5 argonians and imagine how it ridiculously it would be to play as Imperial on Summerset isles or something like this(a lot like being jew in nazi Germany).
Well there is still the continent of Akavir and like hadesflames mentioned it has the snow demons of Kamal, the serpent-men of Tsaesci, the monkey people of tang mo, and the tiger dragons of Ka'Po'Tun. If they introduced that continent it could be quite awesome i think.
dunno why you got thumbed down because you are kind of right because if I remember right the elves have no idea where it is or what it looks like all they know is it exists and it would stand to reason that it could only be far south, far west or something inbetween
