So? It's a school trolley, they do actually care about the other students too. I mean, presumably they had a ********** more to go around, but if they didn't this is pretty much the reaction you'd get (although nicer). The aim is to make the students feel better about leaving their families and going to boarding school, not really to make money.
Honestly the only thing i'd care about would be pure profit + i really don't think that what's on the cart is the full stock they've got on the train, there have to be students who purchase far more and students who purchase far less, it would have to be restocked a few times, nothing wrong with buying it all out.

They definitely would care about a lot more than profit. They're a school, not a business; if they started acting like a pure business, they'd end up losing people.
As I said, presumably they had a ********** more to go around.

I just said how they wouldn't. Or rather, immediate profit from the sweet-selling.
It's fookin magic, you can apparate more food onto the trolly like they do in the grand hall, i imagine the store room of the train doesn't just consist of 1 trolly.

That apparated food is not made of magic; it has to actually be made somewhere. I did kind of say that with the whole "they presumably have more to go around", anyway.
