There's such a vast difference in facial expression between the "Bruce?" panel and the next one where he's upset about Batman being just another "Bruce" in a bat-suit, that it's like two different characters reacting differently to the same comment. I don't get it.

Honestly, I think the "Bruce?" panel face is like "oh my what juicy information I have just received..."
And then the next one, I think, is where he's trying to act not-surprised about "Bruce" being leaked, so he acts facetious about Bruce's name ruining the Joker's "game", so the others don't suspect "oh **** the Joker knows Batman's name, we have to do something drastic now".

I agree with the way you described the first panel, it was just hard to put into words what feeling it gave off.
That's a good idea though, that maybe he was just underplaying how much he valued the information he was just given, I can get on board with that.

i think the first panel is his surprised face, and then the next his usual joking face
Hmm, to me the first panel looks like he just recieved the biggest "all according to plan" boner ever. I'd expect him to want to get at Bruce now when he's not in the batsuit or something based on that expression, not instantly lament that Batman's magical secret identity just got spoiled for him, ruining the fun.
the joker is obsessed with batman, and rarely actually wants to kill him. he sees it all as a game and the batman as a very substantial figure to him due to how long they've fought. knowing his actual identity removes and ruins the mystery since wayne bruce is known as a common millionaire douchebag in gotham to most people. of course this is just my thoughts, i've read a lot of the comics though
