Could simply be because the Falcon is an old ship and doesn't have wireless headsets. It clearly has wireless communication, Lando communicates with the Rebel fleet on the attack of the second Death Star, so maybe it has wired headsets to not interfere with that? I dunno.

its almost like no one ever uses wires nowadays because we have the technology to go wireless.... OP, sometimes having wires is a good thing... bluetooth cant be hacked because there is no bluetooth, dont need batteries, easier to find if its already plugged in, and its a helluvalot cheaper

Keep wireless signals at a minimum and you'll be harder to track.

Furthermore, they're occasionally in zero-G and often experiencing some... turbulence. It doubles as a tether so you don't lose the headset.
