What do vegans want us to do with the cows if we all agree to stop eating them? We've literally farmed them for so long that they are no longer capable of living in the wild. There are MANY stories where vegans set captive animals free and they died pretty near instantly, so why won't they learn?
The only argument I can come up with for them is that they just want to stop the killing or some **** like stopping the suffering of the entire species...but to do that they would have to kill them all and make them extinct so that's not really a sound argument.
Human interaction with nature is really ******* picky. Some of those "endangered species" we preserve actually ***** with the cycle of nature. We try and preserve animals when their population should drop and rise again like normal, and it causes overpopulation and now the predators and prey of that animal are being affected.
Because no vegan thinks that eating meat would go from the current situation to zero in less than a cow's life. It's also pretty easy to preserve a species without eating it...

for someone that already doesnt eat meat, like vegans or vegetarians, eating any meat at all makes you feel sick. not just veal. for someone that already eats meat, veal is delicious. and it does indeed fill one with joy. its also a lot easier to get used to eating meat than eating human flesh. our body rejects human flesh as best as it can, because its just unnatural for our bodies.

Normal human flesh will not cause disease. Eating the brain of somebody who has the Kuru prion disease could cause disease.
Not sure where you heard the claims you've made, but my guess is it comes from the inference that one's body reacts strangely to things it has not acclimated to. To a degree it makes sense. For example- a North American could have bowel discomfort from eating Indian food at first but would get used to it over time.
However, if you have a basic understanding of mammalian physiology, you will know that our meat is almost identical to any other meat we already consume.

The issue with eating the brain of any animal (including human) is not from pirons, but from the cholesterol and fatty tissue. For example, a single 140 g serving of "pork brains in milk gravy" can contain 3500 milligrams of cholesterol (about 10 times a healthy amount in a day). The liver also contains insane amounts of Vitamin A, enough to kill a fully grown man. other organs are either indigestible (stomach, anything with tendons) or process waste (intestines, kidneys, liver) those should be avoided. Human muscle tissue is safe to eat but not in excess. Much like any other meat, too much is bad.
Prion disease takes many years to develop, and also slowly kills the person that was eaten in the first place. I bring that up because if prions were not as rare as they are, you would hear more people dying from them. rather than a few hundred every year. Even then, scientists can't agree if the prions alone cause disease, or if genetics are a factor. they are a new and quite interesting discovery in the field of microbiology that is still not fully understood.
Tl; DR If you don't eat too much, you will be fine. just like any other meat.

it's like pork I choose pork because it is not far off from human. . A few pounds won't harm you. Sometimes it contains parasites or toxins, but that usually won't be a issue if cooked properly. But if you eat large amounts of improperly prepared meat, then yeah, you will have problems.
