Some sushi is cooked. A place where I'm from even has a fried bacon and shrimp roll

That is wrong. Especially nigiri is usually made with raw fish. Maki is more likely to contain cooked food.

I refused to eat sushi for so long because I thought it was raw, majority of it is actually cooked and it's now one of my favorite foods

I wish this was a joke, but my ex gf and her mother once had a 20+min convo about why you cant leave sushi on the counter all day. They came to the conclusion that once it was no longer refrigerated it would begin to slowly cook the raw fish making it no longer technically sushi.

I refuse to eat sushi because I absolutely loathe cold rice. Ew.

Sushi means sour rice, so maybe it was.
