The water is attracted to itself so it is all pulling itself together. Kind of like how if you connected two ends of a spring together in a loop, it would pull itself into a smaller circle if you stretched it then let go.

To put it as simple as possible, water is diamagnetic. Water is able to be effected by magnetic fields and the bonding between hydrogen atoms in water creates a magnetic attraction between the molecules of water. They then attract together because when suspended in air, water attempts to utilize energy to attract atoms to bond together and that is how they curve. Also, if the cap of the bottle is sloped, it pushes the water outwards at a slanted angle, which then causes a greater force of attraction between them.
