It's because there is a Jewish "race" as well as a Jewish religion. People who have Jewish ancestry are genetically distinct from non-Jews (regardless of their religious identity).

This isn't particularly surprising, as Jewish identity has always been closely linked to the narrative of being the descendants of the Biblical Patriarchs and 12 Tribes of Israel. Combined with the fact that Jews typically don't proselytize and conversions to Judaism are rare, most modern day Jews share a common ancestry that goes back thousands of years to the Middle East. Today there are also many Jews who are not religiously Jewish but still identify as Jews for cultural reasons (like Albert Einstein).

Being jewish isn't a race, it's an ehnicity or a religion. Saying it's a race would exclude everyone who doesn't possess the stereotypical features.
Sure jews may have simialr traits, but that is what "inbreeding" does, most jews do come from a bloodline that can date back several thousand years ago.
But you can't say that a religion is a race...

Jewish ethnicity exists as well as Judaism, although closely related they are not necessarily the same thing
