The vehicle weapons are often for specific purposes, or have poor enough accuracy that most of your shots would only trigger suppression and deal minimal damage. You're going extremely fast, they're spread out, and the railings and wall would provide more than enough cover.

lifesavers ONLINE (12/22/2015) [-] DICE hates air vehicles and loves to royally **** on them every patch. The most powerful main gun available for the Stealth Jet - the 20mm - does 6.25 damage at 2000rpm for a whopping TTK of about 480ms (read: painfully slow) assuming every shot hits, but with spread of 0.3-0.6, good luck hitting your moving target that many times while hundreds of meters away while flying through the air. The 30mm does less dps but has a 0-0.6 spread, which might be a bit better.
