There are a few reasons a body takes more or less calories from the same food.
I have never met a single overweight person that ate good food and didn't "cheat".
I have several close friends that are VERY heavy and they all eat much more than I do but it's usually a lot of " **** food".
Two people can eat the same things and digest them differently, I'm not going to talk about genetics because it usually has a relatively minor role (REAL medical disorders notwithstanding). Honestly, if they are fat too the worst thing your parents gave you is your upbringing when it comes to food.
The difference with fit vs. fat people is usually the kind of food but you already knew that. If you eat a tub of rocky road while watching a movie, you know better and deserve your fat(e).

You can make a change fairly easily though. About a year ago I came up with a hypothesis that your body digests food more effectively than we give it credit for. You eat an apple, it digests it as a water based fruit, you eat a steak and digest it as a fatty meat.
The thing that ***** this system up is combinations.

Eating a steak will leave a few pounds of meat in your gut (I eat a lot of meat) and it stays there for about 8 hours if you have a healthy GI tract.
A potato on the other hand only lasts a few hours in there despite the fact that it has some very complex sugars to break down (starches).

Eat the two together and you will take 2-3 times as many calories out of the spud and no additional vitamins and minerals while the steak still isn't half done.

Now, I'm the other way, eat my face off and then work it all off during the day or forget to eat if I get onto a new (interesting) invention. I went the other way with this and strted eating foods that were difficult to digest with every meal.

Have your pasta and add a couple of carrots, or cauliflower, or strawberries, etc.
You slow down your motility and so take more calories from your food.
