a cat when alarmed or threatened generally extends its claws, when being held in a grip like that and with so much skin showing, there'd be some injury I wager

But obviously the woman wasn't holding it in a grip; it was just sitting on her lap. If she was, she let go as soon as she got soaked. That's why the dog was able to hop down so easily. Why would a cat struggle or injure someone who wasn't restraining it when it panicked? At most, her legs might have gotten a scratch on them from the back nails of the cat jumping off in a hurry, but not necessarily.
