I've done a little bit of research, and apparently Stoya a stage name. I think Doll is just what some people are used to calling her, and so they call her Stoya Doll.

Her stage name is a shortened version of her real name, which is Jessica Stojadinović. Apparently her mother named her after Jessica Savitch, an American television journalist.
