I just got it on steam too. I decided to put all my points in luck so i can clear out all the casinos.

Good basic idea, but you need to take into account that your caps have to go somewhere, otherwise they're practically nothing. Better to have 9 Luck starting and buy the Luck implant than to have 10 Luck. That's my theory behind my build.
I'm going to do Lonesome Road eventually. That'll get a bonus stat point, so I can put that into Endurance, which will make it a base 9. I can then get the final implant, which boosts the endurance to 10.
I optimize based on my past experiences. Agility-based Perks aren't overly good (aside from Slayer and Tunnel Runner), and you get enough skill points through leveling up to make up for the downside from starting with 2 Agility.

in very hard hardcore mode? and with weak armor?

I'm not sure you remember just how fast rawr can run up and kill you in one hit

Also, Deathclaws ignore DT, which is what 99.9% of armors in-game provide. Slasher, Med-X, and the Rebreather all give DR, which is a percentage of damage ignored.

True... but he's not immune to the all-powerful RANGER TAKEDOWN!
Sweep his legs, throw sand in his eyes. **** fighting fair, he's a Deathclaw. That's what Spiked Knuckles and Bladed Gauntlets are for. Also, Psycho, Med-X, and Slasher are your friends.

Everytime I try to do an unarmed run, I end up forgetting about the sand attack and murdering all of the great khans.

They're my 2nd least favorite faction.

1st is the van graffs

But... the New Vegas Khans are so chill. How can you hate them?
Turn them against the Legion. Make them realize that Caesar can't give them anything they can't earn themselves.
Better yet, if you really hate them, talk them out of the Alliance, kill Papa Khan, then convince Regis to ally with the NCR. This gets them essentially put on a reservation, from which the NCR will continuously steal land.
Killing your enemy isn't a bad enough fate for them.

Because I always either do Mr. house end or Wild Card end, and I just hate how I would murder all of them for being dicks in Fallout 1, beat that game, start Fallout 2, murder them all again for still being dicks, and then still have them show up in NV.

So I kill them all because the story makes me and I want to finish the job I started in the 90s.

House doesn't want you to kill them all. He just wants them gone. He leaves it up to you how you'll do that. Yes Man is the same way, except he gives no ***** . At all. About anything aside from the general plan of ******* with everyone else.

I've tried to leave them alive in the past, but everytime I try to do the quest to get them to not help Caesar, it glitches and I can't complete it.

Make sure you've done everything to turn them against him. Steal Karl's journal, talk to Jack (because Dianne is a bitch to convince, and Jack's chill as **** ), talk to Melissa, and find the evidence for Regis.
That's the only way to make sure they're pissed off at Caesar. Once they're pissed, tell them to claim their own glory, because the "ghosts and martyrs" option talks them into strapping on bomb vests and telling the dam "Aloha Snackbar!"

Ah. 20 years of pent-up hostility toward a faction tends to do stuff like that.
The Khans in NV are legitimately nice guys for the most part. The exceptions are the guys Benny paid to drag you out to get shot in the head. They're too busy burying their dead to actually be dicks at this point. Bitter Springs did a lot of good in that regard.
