The Yoshi are a mental collective; every time one dies, its experience is added to the whole, and every time one hatches, it gains all the knowledge of the collective at that time. Why else would they be instantly friendly to some random dude who was there when the egg hatched? They understand when Mario has to ditch a Yoshi for a few extra feet. They've been helping him for literally thousands of lifetimes. Every new life is a new adventure, a new joyful experience with their best friend, which all of them will remember, forever.
