You seem to have a keen understanding of the community on the internet. If so, you should know that majority here are actually sympathic about people having trouble in other parts of the world, but they don't either do anything or show that they care. Why? Cause the majority has their own share of **** that they need to tend to first. At least, this is what I like to think the community here is like.
You mentioned you work in the Red Cross thingy in Thailand providing healthcare to people. Now, we understand you trying to get people to help you, but this is the wrong way of approaching things. You basically opened your asshole to all the dicks out there and responded as badly as you could, you're not gonna get any sympathy this way nor any help for the people you think you care about. My theory is that with subjects like starving children, the correlation between misery and sympathy becomes diluted. The scale at which these things occur causes an inflation in how much it affects you. Couple that with the distance you have from these starving children and it further complicates the matter. The complexity of emotion is also an important factor, I reckon. Compare:

Thousands of starving children, mostly from select parts of select continents. You know some of their stories, but very few names. You don't know who they are. They're basically just numbers measuring how much misery is in different regions. There isn't much room for compassion because whatever you feel is mainly directed at the concept of starvation and suffering, not the reality of it.

Ian McKellen breaks down on set and says "This isn't why I became an actor". We know who McKellen is from before. We know how dedicated he is to acting, we know he is a compassionate man and a beacon of the gay community. Later, we can read in interviews about things he's said about this. We can touch the surface of his emotional state of being, and we can look through the surface to get an idea of the depth and complexity of it. In other words, we can understand how he feels and why, which in turn pushes buttons in us and makes us feel with him.

In conclusion, it's easier to sympathise with celebrities who are dear to us than it is to sympathise with starving children because a) We know who they are and what they do, b) We can acquire a greater understanding of how they feel by making closer inquiries on the subject, and c) They are more specific and isolated events, contrary to the endless global problem that is unbalanced resource distribution.

I looked it up at the time, said essentially the same thing in some articles. The main difference is that he became sad and hesitant and nearly said no to the role when Peter Jackson asked him to do Gandalf in the Hobbit but that he would have to do most scenes alone, i.e. it didn't come suddenly on set.
