You have millions of neural connections in your visual pathway, there are cells that are 'programmed' to respond to a number of things including a group of cells for different movements, colours etc. When the neurons in your brain are at rest they randomly fire, when activated there will be a surge of electrical activity in your brain and they fire strongly until the stimulus has gone. What is happening here is that while you're staring at the first image the cells for those specific colours are firing lots, but they quickly get exhausted. Therefore, when the other image comes up the neurons that were previously firing are 'tired', but the neurons for the other colours are still randomly firing so they create a temporary coloured picture in your brain until the visual pathway quickly catches up and you see the image as it truly is
