Apep
The personification of darkness, evil and chaos in ancient egyptian mythology. Apep was the enemy of all things. An enormous serpent that each day lurked in the horizon, waiting for the sun god Ra to arrive, and devour him. Luckily, Ra had other gods with him that protected him. If they failed though, the world would be plunged into eternal darkness. They actually did have to cut Ra out from Apep's belly acording to some stories.
While he was considered a god, Apep was not worshiped, he was feared. He was allways a force of evil, and even had a demon army at his command, that preyed on both the living and the dead. He was also the only being in the pantheon that was considered all powerful. He could not be slain, only temporarly defeated. The priests of Ra regularly performed rituals that would contain or repel Apep's evil.
Empousa
The greek goddess of witchcraft, Hecate, was said to have several different kinds of monsters at her command. One was the empousa. A female demon that Hecate would send to guard crossroads (she was also goddess of crossroads), and devour travelers. They were described as human looking, but with flaming hair, a brass prosthetic leg, and a donkey leg. The uneven legs comes from the fact that "empousa" translates to "one-footed".
Another version is that the empousa isn't a type of creature, but a demigoddess. She was the child of Hecate and the spirit Mormo, and had the appearance like the other version. She did not guard crossroads however. Like the succubus, she seduced men in their sleep, and then drank their blood and ate their flesh.

Raktabija
A mighty demon from hindu stories. Raktabija's name can be translated to "he for whom each drop of blood is a seed", which refers to his special ability. Each drop of his blood that hits the ground, immediately turns into a clone of him, causing anyone who fought him to be overwhelmed by a whole army of Raktabija clones.
He fought in a demon army that plagued the land, and was very feared. But when the goddess Durga fought him, her frustration and rage caused her to enter a new aspect. Kali. Who in her fury drank all of Raktabija's blood, killing him without creating more clones. Depictions of Kali often show her holding Raktabija's head, with his blood dripping into a bowl that Kali holds under it.
Soucouyant
A vampiric witch from the Caribbean. The soucouyant looks like a hag during the day, but will at night throw away her skin, becoming a fireball that flies through the night looking for victims to drink the blood of. Depending on were in the Caribbean you are, the story might have it that the blood is payment to the devil, in return for her magic powers.
To expose her, one could place lots of rice around the house, as she is forced to gather/count all of it, allowing one to catch her in the act. To destroy her, one would have to cover her shedded skin with coarse salt, making her unable to put it on again, and she will perish. The skin of a soucouyant is said to be quite valuable to one who practise dark magic.

Gashadokuro
I heard you liked skeletons, so how about giant skeletons, 15 times larger than a human, made from the bones of people who died of starvation, massed together? The Gashadokuro from japanese folklore are just that. And they also have the power of invisibility and indestructibility.
They are said to roam around after midnight, sneaking up on any human they encounter, pick them up, bite their heads off, and drink their spraying blood. Shinto charms would ward them off though, and when approaching, one is said to hear loud ringing in the ears.
