well just because you know everything doesn't nessecarily mean you know how to use that knowledge effectively to get end results. You would know whether or not someone else has become omni potent, and what method they had used, but you wouldn't nessecarily know exactly how to reproduce the results because you becoming a god isn't something that currently exists and you only hold information that is true not potentially true.

there might not be a straight forward way to reproduce it, you could know how everything had to align in order for it to happen the first time but not properly understand how to align everything together again so as to make it possible a second time. You also might just straight up lack the resources or circumstances required to make it happen.

Reductio ad absurdum, or 'reduction to absurdity'. You guys could argue all day long about what's impossible and what's not, you wouldn't get anywhere. The point is we don't know, we can't know until we find out in future what's possible and what's not.
Because we're all still expanding our collective knowledge. It is possible that at some point in distant future, entire humanity could become omnipotent beings. It's just so beyond our understanding right now that all we can do now is imagine and guess.
