Why would you put ketchup in a burger? There are countless other options.

My favourite burger would be chicken and goat cheese burger with fig jam on the cap and some red pepper mayo under the veggies, but I wouldn't have ketchup even in the most basic burger.

So you take a tomato that's pretty much a solid thing, you make it into ketchup that is pretty much a liquid and then you make it again solid. It almost seems like you can skip a step by putting tomatoes on the burger instead.

kethup leather sounds way grosser than soggy burgers. also what the **** are you doing if your customers are getting soggy burgers, they should be served fresh with customers having the liberty to apply ketchup as desired
