The thing I've always hated about this is that the idiot throws away the pre packaged chili seasoning... and then uses a bunch of processed, preservative laced seasoning of the SAME name brand.

This is a good recipe, let me just make a few suggestions if you plan to make it.   
 1: Buy really good spices. McCormic spices are wallmart quality, and not that much better then just buying a spice mix. Also if you look at the spice and it has any ingredients except the actual spice, its crap. best thing is to buy whole spices and grind them yourself before cooking, but ain't no one has time for that, so that aside try a good quality brand like Frontier   
 2: Add about a tablespoon of paprika to this. It adds a lot of peppery flavor for no adittional heat. Chopping up some jalapenos adds flavor AND heat.   
 3: Let it simmer on low heat for ATLEAST 2 hours. 3-5 for truly magnificent results.   
 4: if its getting to dry from long simmering add a bit of beef broth, it won't change flavor or water it down, but will add more moisture   
 and   
 5: get marbled beef and don't drain it completely after browning. beef fat carries a lot of flavor.

When I'm cooking and buying the **** , I buy quality. I really prefer Spice Island brand of spices. Expensive as **** , but ******* worth it. I'll have to look up frontier and get some if they have what I'm looking for.

My mum makes the absolute best chili (even complete strangers say that it's about the best they've had when she brings some round to church or social gatherings).

But, you know what, this looks pretty awesome. I've never heard of anyone mixing crackers and cheese into their chili before, but it sounds pretty good.

You've convinced me, OP, I'll try to remember to make this when I pick up the shopping next.
