there is a fungi that can do that. it takes over the entire host body without technically killing them until a point where the entire body is consumed and the body explodes into a cloud of spores. if zombies were going to happen, it would be this.

Well, there's this little guy. It's a fungus that uses ants as part of it's life cycle. The fungus infects the ant, consuming non-vital tissues. It also produces substances that affect the ant's brain, changing it's behaviour and leading it to climb a plant and latch itself firmly using it's mandibles. The ant then dies and the fungus continues to grow, eventually producing the reproductive structure shown in the picture. So there you go, nature has zombie ants.

There's actually a thing for this in the World of Darkness games, its called a Visitor...its basically a brain worm that burrows in, and gives you immortality and regeneration...but replaces your brain with its body. You stay in control, though, and it doesn't hurt your mind (You actually get a bit smarter)

The downside is, it can control you while you sleep, and if it ever meets another Visitor, there's a chance your skull will open up so the thing can mate with the one inside someone else's skull. So yeah.
